Best of the Fest German Style Potato Salad

Suggested beer type: Wheat - Hefeweizen

Serves 6
1 tsp. Salt
1 lg. Bay leaf
12 oz. Water, cold
12 oz. Weiss beer
3 lb. Red bliss potatoes, washed and diced, 1" x 1"
1 lb. Bacon, diced
1 lg. White onion, peeled, cut in 1/2, sliced thin
1 T. Garlic, chopped
2 T. Brown sugar
1 T. Dijon mustard
2 oz. Cider vinegar
1 tsp. Fresh Thyme leaves
1 tsp. Salt
1/4 tsp. Fresh Cracked Black Pepper
1 Bunch Scallions, sliced thin, for garnish

Method: Mix the water and beer together, add the salt and bay leaf, bring to a boil. Cook the potatoes until fork tender. Meanwhile, cook the bacon until almost crispy, add onions and garlic. Cook, stirring occasionally for 3-4 minutes. Add the brown sugar, mustard, the cider vinegar, fresh thyme, strain the cooked potatoes and add them to the pot with a little of the liquid, season with the salt and pepper. Cook another 3 - 5 minutes over low flame until the ingredients and flavors blend. Garnish with sliced scallions. Serve warm or cold. Courtesy of The Brew Chef ™
