Hongos Burrachos Con Cerveza (Druken Mushrooms with Beer)

Suggested beer type: Stout - Dry Stout

Makes 6 Servings

24 Large Button Mushrooms, stems trimmed
4 T. Vegetable Oil
1 tsp. Garlic, chopped
1 tsp. Shallot, chopped
4 oz. Porter or Stout
4 oz. Chicken or Beef Stock
2 oz. Meat Glaze (optional)
2 oz. Heavy Cream
1 T. Fresh Tarragon, sliced
Pinch Salt
Cracked Black Pepper
Shot Tabasco Sauce
Dash Worcestershire Sauce

Method: Heat the oil in a large sauté pan. Add the mushrooms and sauté until evenly golden brown. Add the garlic and shallot, lightly sauté, then, remove the pan from the flame and add beer, carefully return to flame. Add the stock and glaze, simmer until 2/3 has evaporated. Add the cream and tarragon, reduce until thick and the sauce adheres to the mushrooms. Season and serve immediately with cocktail forks and garlic bread and your favorite dark beer.
